I’ve had another busy night in the kitchen, i’m not sure how productive it has been but it has been fun and I currently have two cakes resting on a cooling rack waiting for me to add the frosting before the tasting #nom.

This is the recipe that I have followed for the cake for the frosting I am using 8oz of cream cheese to 4oz of maple syrup which I have whipped to within an inch of its life and then set in the back of the fridge to chill down – I added the maple syrup gradually to avoid a wet frosting – so far… so good… i’ll let you know how it turns out.

It’s been a welcome distraction from the impending new measures that may well be announced tomorrow about Lockdown… the joy that doesnt give and never ends – one day soon hopefully.
